Scalloped Potatoes

6 Potatoes sliced thin
1 large onion sliced thin
Layer in a 2 quart casserole dish.
Add 2 cups of milk mixed with 1/4 cup flour
Salt and pepper to taste
2 tbs butter

Bake covered at 350 F for 1 1/2 hours

I sometimes add a can of cream corn.This is delicious.

OLD SETTLERS BEANS

INGREDIENTS:
1/2 lb. ground beef1/2 lb. bacon
1 chopped onion
Brown in skillet and drain excess grease.

ADD:
16 oz. can Red Kidney Beans (drained)
24 oz. can Pork & Beans (drained)
1/2 cup white sugar
1/2 cup dark brown sugar
1/4 cup ketchup
2 TBLS. Molasses
1/2 tsp. dry mustard

Mix Thoroughly !
Cook in a crock pot until...hot...hot...hot!

Baked Chop Suey

1 lb boneless sirloin steak cut in strips
3/4 cup chopped celery
2 cups sliced mushrooms
1 cup chopped onion
1 10 oz can of cream of mushroom soup
1/2 cup grated cheddar cheese
1 can of bean sprouts or use 2 cups of fresh bean sprouts

Preheat oven to 350 F
Saute steak in fry pan until brown
Add the remaining ingredients.
Bake covered for 1 hour.
Sprinkle with noodles and bake 15 minutes longer.
Put in a 2 quart casserole dish

Baked Rotini

4 cups cooked rotini
1 lb hamburger
1 small onion chopped
Cook hamburger with onion.
Then add:
1 can of tomato soup
2 tbs soy sauce
1 garlic clove crushed
Add to rotini and turn into a 2 quart casserole dish.
Sprinkle 1 cup shredded mozzarella cheese over top
Bake at 350 F for 20 minutes or until cheese is browned.

Serve with garlic bread and a ceasar salad.

Sweet`Sour Meatballs

1/2 cup dry bread crumbs
2 tbs flour
Salt and pepper to taste
1/4 tsp garlic powder
1/2 tsp parsley flakes
1/2 cup water
1/3 cup onion chopped fine
1 lb hamburger

Combine together and make meatballs about 30 meatballs.
Put on cookie sheet and bake 375 for 15 to 20 minutes

Sweet N Sour Sauce:
1 cup boiling water
1/2 cup grape jelly
1/4 cup ketchup
In a saucepan add boiling water,grape jelly and ketchup.Bring to a boil.
Mix 2 tbs corn starch with 2 tbs water and gradually stir into sauce.

Put meatballs in a 2 quart casserole dish and pour sauce over top.
Bale covered at 350 F for 20 to 25 minutes.

Macaroni With Beef And Cabbage

1 small cabbage coarsely grated
1/2 cup raw macaroni
1 lb lean hamburger
1 cup onion chopped
Salt & pepper to taste
1 10 oz can of tomato soup
1 tomato soup can of water

Put 1/2 the cabbage in a 2 quart casserole dish and spread raw macaroni over top.
Cook hamburger and onion.Add salt and pepper.
Pour over macaroni.
Put the rest of the cabbage on top.
Mix soup with water and pour over top.Do not mix.
Bake covered at 350F for 1 1/2 hours.

Roast Beef Casserole

Cook 1 cup of macaroni in 1 1/2 quarts of salted water

In a fry pan cook 1 cup chopped onion and 1/2 cup celery.
Add to cooked macaroni.
Stir in 2 cups chopped cooked roast beef and 1 10 oz can of tomato soup,1 cup of milk.
Put in a 2 quart casserole dish.
Bake uncovered at 350 F for 30 minutes.
Sprinkle with 1/2 cup grated cheese.
Bake for 5 minutes or until cheese melts.

Fish Casserole

1 28 oz can stewed tomatoes with juice
1 tsp white sugar
2 tbs worcestershire sauce
1/8 tsp salt
1/4 cup finely chopped onion
1 lb. cod fillets cut in bite size pieces
1/2 cup bread crumbs

Combine the first 5 ingredients in a medium saucepan.
Bring to boil.Reduce heat and simmer uncovered for 30 minutes.
Place cod in a single layer on the bottom of a casserole dish.
Pour tomato mixture over top and sprinkle with bread crumbs.
Bake at 375 F for 20 to 25 minutes until fish flakes easily,and topping is golden brown.

Seafood Casserole

1 cup long grain rice
1 3/4 cups of boiling water.
Cook rice in boiling water until tender and water is absorbed.
Put 2 cups sliced mushrooms,1 cup diced celery and 1/2 cup diced green pepper in a fry pan.Saute until soft.
Mix in 3 tbs flour,2 1,2 cups skim milk and 3 tbs chicken bouillion powder,2 tbs seafood bouillion powder.
Cook until mixture boils and thickens.
Add 1/4 lb of shrimp,1/4 lb scallops,1/4 lb of imitation crab.
Add rice.
Put into a 2 quart casserole dish.
Melt 1 tbs margarine or butter and mix in 1/3 cup dry bread crumbs.
Sprinkle over casserole.
Do not cover!
Bake at 350 F for 45 minutes.
Makes 6 1/2 cups.

Macaroni Tuna Casserole

1 1/2 cups macaroni raw
3 quarts of boiling water.
Cook macaroni and drain.
In sauce pan mix:
3 tbs flour
salt and pepper to taste
1 cup skim milk
Whisk all together until no lumps remain.
Heat and stir until mixture thickens and boils.
Stir in 10 ozs of chopped spinach cooked and drained.
1 6 1/2 oz can of tuna drained and flaked.
1/2 lb of ricotta cheese broken up into pieces.
Add cooked macaroni.
Put into a 2 quart casserole dish.
Sprinkle with paprika.
Cover.
Bake at 350F for 25 to 30 minutes
Makes 6 servings.

Chicken Macaroni Casserole

1 12/ cups macaroni
3 quarts of boiling water.
Cook macaroni and drain.
Then mix together:
1 1/2 cups sliced carrots cooked
3/4 cup peas cooked
1 1/2 cups cooked diced chicken
1 10 oz can of cream of mushroom soup
1 cup of skim milk
1/2 tsp garlic powder
Salt and pepper to taste
Add macaroni and mix well.
Put into a 2 quart casserole dish.Cover.
Bake at 350 F for 30 minutes
Makes 8 cups

Oven Stew (Beef)

1 lb of stewing meat or round steak cut in small pieces
1 onion chopped
3 medium potatoes peeled and diced about 1 inch
3/4 cup turnip diced about 1 inch
4 medium carrots sliced about 1/2 inch
1 5 1/2 oz can of tomato paste
6 tbs light soy sauce
2 cups water
Salt and pepper to taste
Put meat in fry pan with onions and cook until brown.
Add remaining ingredients and pour into a small roasting pan.
Cover
Bake at 300 F for 3 to 4 hours or until meat is tender.
Serves 4

Macaroni and beef casserole

Cook 1 cup of raw macaroni,drain
Saute 1/2 cup chopped celery and 1 cup chopped onion until soft.
Mix in 1 tbs flour then stir in 1 cup of skim milk.Let boil and thicken,remove from heat.
Add 1 10 oz can of tomato soup,1 3/4 cups sliced cooked carrots,1 cup of cooked peas and 2 cups chopped cooked roast beef.
Stir in macaroni.
Put into a 2 quart casserole dish.
Do not cover!
Bake at 350 F for 30 minutes.
Sprinkle top with cheese and bake 5 minutes longer.
Makes 6 1/2 cups

Ground Beef Patties with Gravy

1/3 cup bread crumbs
2 tbs flour
salt and pepper to taste
1/2 cup skim milk
1 lb ground beef
Combine all together and make 8 patties.
Brown patties in fry pan then put into a 2 quart casserole dish.

Gravy:
1 10oz can of tomato soup
2 tsps beef bouillion powder
2 tbs onion flakes
1 1/4 cups of water
Mix all together and pour over patties.
Cover
Bake at 350 F for 1 hour.

Burger Sprout Casserole

1 lb lean ground beef
2 cups celery,sliced
1/2 cup long grain rice,uncooked
2 cups fresh bean sprouts,packed
2 10 oz cans of cream of mushroom soup
1 1/2 cups of water
4 tbs light soy sauce

Put ground beef into a fry pan and cook till brown.
Put into a 3 quart casserole dish
Combine all ingredients and stir.
Pour over ground beef and mix.
Cover.
Bake at 350F for 1 1/4 hours,remove cover and bake for 15 minutes more.
Makes 7 1/2 cups

Green Pepper Steak Casserole

1 1/2 lbs lean boneless round steak(cut in thin strips)
1 10oz can of condensed onion soup
1 14 oz can of diced tomatoes
1/2 cup onion chopped
1 green pepper(seeded and cut in thin strips)
2 cups sliced mushrooms
1 tbs. light soy sauce

Put steak strips in a fry pan,cook until browned.
Put into a 2 quart casserole dish.
Mix the remaining ingredients and pour over meat, stir.
Cover.
Bake at 350F for 1 1/2 to 2 hours or until meat is tender.
Makes 5 cups
